Fant en oppskrift på bloggen til <a href="http://lavkarbohverdag.com/2011/08/08/peppersaus-lchf/">Hanne og Kari</a>, som jeg tok utgangspunkt i.<br />
<br />
<strong><u>Peppersaus</u></strong><br />
2 ss smør<br />
40 grønne pepperkorn<br />
1/3 ts malt pepper<br />
1 ss finhakket løk <br />
1/2 terning hønsebuljong<br />
3 dl kremfløte<br />
4 ss creme fraiche<br />
1/2 ts soyasaus <br />
<br />
Smelt smøret i en kjele.<br />
Tilsett pepperkornene,malt pepper og løken.<br />
Ha i fløte og buljong.<br />
La det koke i ca. 5 min, før du har i creme fraiche.<br />
Smak til med soyasaus.<br />
<br />
På bilde er sausen ganske tynn.<br />
Det er fordi jeg kokte ut panna, som svinefileten hadde stekt i, med litt vann og hadde i sausen.<br />
<br />
<br />
<strong><u>Svinefilet</u></strong> <br />
1 svinefilet delt i to<br />
salt og pepper<br />
friske (eller tørkede) urter, jeg brukte oregano og timian<br />
<br />
Skjær av sener ol på svinefileten.<br />
Kni den inn med salt og pepper.<br />
Smelt godt med smør i en panne.<br />
Når smøret er skikkelig varmt har du i fileten.<br />
Ha også i noen stilker med friske urter (eller kni inn fileten med tørkede før du legger den i panna).<br />
Brun kjøttet på alle sider.<br />
Ha fileten i en ildfast form. <br />
(Jeg brukte stekepanne med avtagbart håndtak som jeg også stekte fileten i)<br />
<br />
Stek den i ovnen, på 220 grader i 20-30 min.<br />
<br />

2 -3 buljongterninger, grønnsak<br />
2 ss frisk oregano, hakket (andre urter kan også brukes)<br />
2 ss frisk timian, hakket (har du ikke ferske urter, tillsett tørket i kokevannet)<br />
litt sitronsaft<br />
hvitløkspulver<br />
pepper<br />
1 vårløk, i ringer<br />
<br />
Kok opp vann med buljong i.<br />
Del blomkål i mindre biter.<br />
Kjør den knudrete i en stavmikser (med sånn bolle med kniver) eller kjøkkenmaskin.<br />
Ha blomkål i vannet og la det småkoke i 3-4 min.<br />
Ha blomkålen over i en sil og sil av vannet.<br />
Ha den tilbake i kjelen.<br />
Tilsett urter, sitron og krydder og bland godt.<br />
Smak deg litt fram.<br />
La den stå og dampe av seg litt vann.<br />
Rett før servering tilsetter du vårløk.<br />

Lurer egentlig på hvorfor, for det er veldig godt.<br />

Her er min versjon av den:<br />

<u><strong>Nakkekoteletter i estragonsaus</strong></u> <br />
<br />
4 nakkekoteletter, delt i to<br />
salt<br />
pepper<br />
estragon<br />
smør<br />
<br />
<u>Saus:</u><br />
smør<br />
1/2 rødløk, finhakket<br />
2 dl vann<br />
3 - 4 dl fløte<br />
1 ss sennep<br />
1/2 ss dijonsennep<br />
2 ts soyasaus<br />
2 ts tørket estragon<br />
salt og pepper<br />
<br />
<br />
Ha salt, pepper og estragon på kotelettene<br />
Smelt smør i en panne og ha i kjøtttet.<br />
Jeg fikk ikke plass til alle i panna, så stekte dem i to omganger.<br />
Stek dem 3 min på hver side, altså 6 min tilsammen.<br />
Ta nakkekotelettene ut av pannen og legg dem til siden.<br />
<br />
Ha mer smør i pannen.<br />
Stek løken myk og ha i vann.<br />
La det koke til mesteparten av vannet har fordampet. <br />
Ha i fløten og tilsett sennep, soyasaus og estragon.<br />
Smak til med salt og pepper<br />
Legg nakkekotelettene i sausen.<br />
La det koke noen min.<br />
Pga noen forsinkelser her hjemme, ble mine liggende på svak varme (trinn 1) i nesten 1 time. <br />
De ble ikke tørre av det, smakte nydlig.<br />
<br />
Server med kokte grønnsaker.<br />
Vi hadde brokkoli og blomkål til.<br />

4 kylling fileter, i terninger<br />
2 ts curry (obs det er forskjellig styrke på karrikrydder, så prøv deg frem)<br />
salt og pepper<br />
1 beger creme fraiche (ble litt "tørt, neste gang har jeg i mer væske, creme fraiche el. fløte ca 1/2 dl)<br />
1/2 dl fløte<br />
<br />
1/2 brokkoli, i veldig små buketter<br />
1/2 blomkål, i veldig små buketter<br />
det grønne på en purre, i ringer<br />
<br />
Start med å smelte smøret i en panne, sammen med currykrydder.<br />
La kryddersmøret bli skikkelig varmt.<br />
Ha i kyllingbitene.<br />
Når kyllingen har fått farge, ha i creme fraiche og fløte.<br />

<u>Aubergineform med cottage cheese</u><br />
1 aubergine<br />
smør og olje<br />
salt og pepper<br />
<br />
1 løk<br />
500 g kjøttdeig<br />
2 fedd hvitløk<br />
1 grønn paprika<br />
2 ts tørket timian<br />
3 ts tørket persille<br />
1/2 ts kanel<br />
(10 g mørk sjokolade)<br />
1 ts oregano<br />
1 dl tomatpure <br />
2 dl vann<br />
<br />
1 beger cottage cheese<br />
revet ost<br />
<br />
Start med å dele auberginen i skiver.<br />
Stek de i smør og olje, du må beregne en god del da de suger til seg mye.<br />
Ha på salt og pepper.<br />
Dette må gjøres i flere omganger, da det ikke er plass i stekepanna til alt.<br />
Legg aubergin til siden, mens du startet på kjøttsausen.<br />
<br />
Brun løken og ha i kjøttdeigen.<br />
Ha i hakket hvitløk og paprika i terninger.<br />
Tilsett resten av ingrediensene. <br />
Ikke cottage cheese og revet ost.<br />
La småkoke til vannet er borte.<br />
<br />
Sett sammen retten slik.<br />
I en ildfast form har du halvparten av kjøttsausen.<br />
Ha halvparten av auberineskivene over.<br />
Ha cottage cheese begeret over.<br />
Legg så reste av aubergineskivene i.<br />
Avslutt med resten av kjøttsausen.<br />
Topp med revet ost<br />
<br />
Stekes på 225 grader i 30 min.<br />

Denne oppskriften kommer med en lettere irritasjon.<br />
Ingenting gikk etter planen blæææææ.<br />
Ble godt tilslutt da.<br />

Først så hadde jeg bare frossene kyllingklubber, økte da steketiden til en time.<br />
Da jeg tok retten ut av ovnen, var ikke kyllingen gjennomstekt og sausen var ikke skikkelig varm.<br />
Satt den inn 15 min til og skrudde opp temperaturen til 250 grader.<br />
Tok ut igjen, fortsatt ikke bra.<br />
Oppdager da at jeg også har glemt å ha oppi mandlene.<br />
Jaja får tilsette de nå da, siden retten må inn i ovnen igjen.<br />
Da oppdager jeg at det er tomt for mandler.... er det mulig?!<br />
Så da ble det cashewnøtter isteden.<br />

900 g kyllingklubber<br />
2 dl Tyrkisk yoghurt<br />
1 boks hermetiske tomater<br />
2 dl fløte<br />
100 g mandler (eller cashewnøtter)<br />
1 stor løk eller 2 små, i ringer<br />
2 ss olivenolje<br />
2 fedd hvitløk, finhakkert<br />
1 ss paprikapulver (pass på, paprikapulver er forskjellige når det gjelder styrke)<br />
1 klype kajennepepper<br />

Bland sammen yoghurt, fløte, hermetiske tomater, løk og hvitløk.<br />
Bland så i olivenolje, paprikakrydder og kajennepepper.<br />
Ha kyllingen i en ildfast form og ha over yoghurtblandingen.<br />

Stekes i ca 40 time på 180 grader.<br />

Opprinnelig med soyasaus, det er ikke jeg så glad i, så kuttet det ut.<br />

<u>Koteletter med rosenkål og fløtesaus</u> <br />
4 koteletter<br />
1 pose rosenkål, frossen<br />
2 små rødløk<br />
4 fedd hvitløk<br />
5 dl fløte<br />
salt og pepper<br />
1 1/2 ss tørket persille<br />
<br />
Brun kotelettene i smør, ha på salt og pepper.<br />
I en langpanne har du rosenkål, fløte, løk og hvitløk.<br />
Når kotelettene har fått farge har du dem over i panne.<br />
Ha gjerne stekefettet også over.<br />
Ha på mer salt og pepper.<br />
Strø over persille.<br />

Denne gangen langstekte jeg det.<br />
Passet bra siden maten gjorde seg selv,<br />
mens vi var ute av huset noen timer.<br />

Ser ut som enkle og greie middager.<br />
Tenkte jeg skulle teste flere av dem fremover. <br />

Denne kyllingkjøttdeig-retten var ikke lavkarbo opprinnelig, <br />
men ikke vanskelig å gjøre om.<br />
Da jeg skulle lage maten, måtte jeg gjøre enda flere forandringer.<br />
Skulle ha karri men fant kun curry...<br />
Da må jeg nok teste med karri en annen gang.<br />
<br />
<u>Kyllingboller i currysaus, lavkarbo-Rema 1000</u><br />
<u></u><br />
Kyllingboller:<br />
800 g kyllingkjøttdeig (jeg brukte en med kylling og kalkun kjøtt i, "Solvinge")<br />
1 dl fløte<br />
1 egg<br />
1 fedd hvitløk, presset<br />
salt og pepper<br />
<br />
Smør til steking<br />
<br />
Ha alle ingrediensene i en bolle og bland godt.<br />
<br />
Smelt rikelig med smør i en panne.<br />
Lag passe store boller og stek på høy varme.<br />
Siden deigen ikke har mel i seg,<br />
blir de ikke helt runde når du steker dem.<br />
Ser mer ut som små kjøttkaker.<br />
Husk å snu bollene av og til.<br />
(Lurt å steke 1 først, smake og evt. tilsette mer salt og pepper).<br />
<br />
Legg til side de gjennomstekte kyllingbollene og lag sausen.<br />
<br />
Saus:<br />
1 stor eller 2 små rødløk<br />
1 fedd hvitløk<br />
2 1/2 dl vann<br />
1/2 terning hønsebuljong<br />
2 store tomater eller flere små, i biter<br />
<br />
Smør til steking<br />
<br />
Start med å brune løk og curry i smør.<br />
Ha i hvitløk.<br />
Tilsett vann og buljong.<br />
Ha i kyllingbollene og varm opp.<br />

2-3 ss tomatpure, sjekk karbo innhold (kan kuttes ut)<br />
ca 5 dl fløte <br />
1 pose frossene rosenkål<br />
1 pose frossene blomkål og brokkoli<br />
salt, pepper, timian<br />
1 pk bacon<br />
<br />
Start med å steke en kotelett av gangen i varm panne.<br />
Da får de skikkelig sprø stekeskorpe og holder seg saftigere.<br />
Stek kun til de har fått farge.<br />
<br />
Ha grønnsaker og kjøttet i en langpanne.<br />
Rist litt av fløta og tomatpureen sammmen, ha over grønnsakene.<br />
Ha over resten av fløta og krydder.<br />
<br />
Hadde bacon, i skiver, over formen når det var ca. 30 min igjen.<br />
<br />
Stekes i ovnen på 225 grader i 1 time.<br />
<br />
Gubben jobbet overtid, satt restene inn i ovnen igjen.<br />

Olje og smør<br />
3 kyllingfileter i små biter<br />
2-3 store ts curry pasta, mer eller minder etter hvor sterk du liker maten.<br />
1 lime, saften<br />
1 pose findus rotgrønnsaker (eller velg grønnsaker med mindre karbo)<br />
2 bokser kokosmelk, ikke lett (sjekk karbo innholdet)<br />
4 dl vann<br />
litt salt<br />
<br />

Start med å dele kyllingen i veldig små biter, mens du varmer olje og smør.<br />
Ha curry pastaen i fettet og la det frese i noen min.<br />
Ha i kyllingen og fres til den har fått farge.<br />
Tillsett grønnsakene og bland godt.<br />
Ha i resten av ingrediensene.<br />
Smak til med salt.<br />
La koke 10-15 min (eller lenger)<br />

Jeg har lenge lurt på hvordan man kan tørke ferske urter, slik at de ikke bare visner og ikke kommer til nytte.<br />

Etter å ha googlet litt, fant jeg ut at det ikke virket så vanskelig.<br />
<br />
<strong><u>Tørking av urter</u></strong><br />
<br />
Vask urtene og fjern døde blader.<br />
Om det er urter med kraftige stilker må du fjerne disse fra bladene.<br />
(Jeg var ikke flink nok til det når jeg tørket timian. Måtte derfor plukke litt stilker etterpå.)<br />
Legg et kjøkkenhåndkle på stekebrettet.<br />
Legg urten utover kjøkkenhåndkle. <br />
Sett ovnen på varmluft 50 grader.<br />
Sett inn urtene, døra lukker du ikke men setter på gløtt.<br />
La urtene stå til de er helt tørre, det tar en hel dag.<br />
Pass på, og snu litt på urtene underveis.<br />
<br />
Når urtene var tørre, brukte jeg en mortel for å knuse til passe størrelse.<br />

Bedre smak enn kjøpeurter ble det også.<br />

3 buljongterninger kjøtt<br />
2 l vann<br />
5 kjøttpølser<br />
ca 2 ss smør<br />
timian, pepper, salt<br />

Del alt opp i passe biter og ha det i en kjele.<br />
Velg blomkål og brokkoli med mye stilk. <br />
Stilken gir litt mer tyggemotstand.<br />
Hvitløken knuste jeg bare med hånden og hadde hel oppi kjelen.<br />
Ha vann og buljong over grønnsakene.<br />
Kok opp og la det koke til grønnsakene er møre.<br />
Pølsene og smøre har du i mot slutten.<br />
Smak til med krydder, bruk gjerne andre urter enn timian.<br />

<u>Kylling form med paprika</u><br />
<br />
3 tomater i skiver<br />
4 kyllingfileter i biter<br />
1/2 rødløk, finhakket<br />
1 fedd hvitløk, finhakket<br />
1 rød paprika, i strimler<br />
2 dl fløte (evt. 1/2-1 dl)<br />
1 beger creme fraiche<br />
salt, pepper og orgegano<br />
revet ost<br />
<br />
Stek kyllingbitene i olje, på sterk varme, til de har fått farge.<br />
Imens deler du opp tomatene og legger utover i en ildfast form.<br />
Ha kyllingen over tomatene.<br />
Ha på salt, pepper og oregano.<br />
<br />
Sett stekevarmen ned på panna og ha i løk og hvitløk.<br />
La det surre til det er blitt mykt.<br />
Ha løken over kyllingen sammen med paprikaen.<br />
<br />
Ha over fløte og creme fraiche,<br />
før du avslutter med godt med revet ost.<br />
<br />
Stek på 200 grader i 40 min.<br />
